Salsiccia Pizza

Recommended Pairing: Angry Wife Red, Holiday Reserve Zinfandel, Sangiovese, Super T

Ingredients:
8-ounces pizza dough*
4-ounce sweet Italian sausage
½ teaspoon crushed red pepper
1 tablespoon fennel
½ red onion, thinly sliced
¼ teaspoon salt
1 tomato, chopped
8-ounces Mozarella
2 tablespoons chives

Preheat oven to 500°F.

Heat olive oil in large skillet over medium-high heat. Cook crushed red pepper for 10 seconds. Remove casing from sausage and add to pan, along with fennel and red onion. Saute 4 minutes, or until browned, stirring to crumble the sausage. Add the salt and chopped tomatoes, sautéing 2 minutes or until tender.

Spread the sausage mixture over your favorite pizza dough, then cover with mozzarella and chives. Bake at 500°F for 8-12 minutes or until crust is golden.

* Found at specialty grocery stores, or you can make your own.
