Grilled Mahi Mahi with Tomatillo and Mango Salsa

Serves 4

2 mangos, peeled, seeded and diced
3 limes, juiced
1 jalapeno, seeded
1 orange, juiced
10 medium tomatillos, peeled and diced
1 tomato, diced
1 red onion, diced
½ cup cilantro, chopped
(4) 6-ounce Mahi Mahi filets, skin removed
1 tablespoon olive oil
Salt and pepper, to taste

To make the salsa, combine ½ diced mango, 2/3 of the lime juice, and all of the jalapeno and orange juice and puree until smooth. Combine the pureed mixture with the tomatillos, tomato, red onion, cilantro and remaining mango and season with salt and pepper.

Season fish with the remaining lime juice, olive oil, salt and pepper before cooking over a hot grill on each side for 4 minutes.

Spoon the tomatillo and mango salsa over the fish and serve.
