An Oven Roasted Recipe

Can you believe it’s November?  Wasn’t it just yesterday that we were planning for Thanksgiving and digging out our Christmas lights and, suddenly, we’re at it again.  To mark the beginning of the 2012 holiday season, I’m sharing a recipe that is warm, comforting and a cinch to pull off.  This side dish is so good with nearly every main dish whether it is poultry, pork, meat or fish.  Check out our wine recommendation at the end of the recipe!  It’s delish.

Roasted Potatoes with Garlic Mayonnaise

Preheat oven to 425 degrees.  Cut potatoes into wedges and place them on baking sheet.  Toss potatoes with olive oil, and a generous amount of salt, pepper and garlic powder.  Spread out potatoes into a single layer and place in oven.  Roast for about 30 minutes, or until potatoes are golden brown.  Toss potatoes halfway through cooking.  Serve with Garlic Mayonnaise for dipping.

Garlic is excellent with a cool rose wine.  This recipe is delicious with Ponte 2011 Fiorella.
