A New Year, A New Recipe: Raw Vegan Cheesecake.

He doesn’t just make wine, he makes treats.  With the giving season in the air, our winemaker, Mark, surprised our office this Christmas with ‘cheesecake.’  I quote it because it’s not really made with cheese, nor is it a cake.  This treat is made with whole ingredients without baking.  So for you health food nuts (and those who, like us, totally overindulged and are looking to do something good for yourself to start out 2014) this recipe is for you:

To make one pie you will need…

Ingredients for the crust:

  • 2 cups of raw walnuts
  • ½ cup of pitted dates
  • ¼ cup dried coconut

Ingredients for the filling:

  • 3 cups of raw cashews (soaked overnight)
  • ½ cup agave nectar
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract
  • ¾ cup coconut oil

Directions: Since this a raw recipe, it doesn’t require any baking, making it super easy and fast to make.  Simply combine the crust ingredients in a food processor then press them into a pie pan.  Then, blend the filling ingredients and pour mixture on top of crust.  To firm the pie, freeze it for an hour or until ready to serve.

And when you are ready to serve, the winemaker recommends to “Pair likes with likes,” he says. “With the nutty sweetness of the treat, try pairing it with Ponte Mistela. This golden wine has notes of hazelnuts to accompany the cashews and walnuts.”
