Once upon a time The Restaurant at Ponte Winery began serving guests a house-made oil with their bread baskets. The guests liked it. The guests asked for seconds. Eventually, the guests asked if they could take some home. And so, Ponte’s bottled Scallion Dipping Oil was born.
Each bottle is made from fresh green onions, canola oil, white wine vinegar, garlic and shallots. While we’re convinced one could make a meal out of a bottle, a baguette and 2010 Viognier, Scallion Oil is an excellent marinade to chicken, white fish, scallops, shrimp and vegetables. Don’t count it out as a salad dressing and sandwich topper either. Yes, we still serve it with our focaccia bread at The Restaurant (we’re pretty sure guests would revolt if we ever took it away), so come try it out for yourself.
