Harvest Update: A Cool New Fermenter

Big things are happening in the tankyard!  We have just received a revolutionary fermenter tank with a Ganimede system in our tank yard.  On delivery day, the winemaking team gathered to witness the 12 ton-capacity tank weighing 5500lbs being crane lifted off of the truck into our yard.

It was delivered precisely on the spot and placed upright. A welding team worked to install it to the ground where it will be secured for our winemaking operations.

This exciting new piece of equipment will create a better wine with less energy.  It is the only fermenter which uses natural energy and allows for mixing cycles without using any pumps or human labor.  How it works is this: the tank has an internal funnel which captures carbon dioxide, and when valves are opened, the CO2 displaces wine across the cap and extracts character from the grapes.  This allows us to get color and tannins from the process. Translation: great-tasting wines for you!


The new tank holds up to 1 1/2 times the wine as one of our regular fermentation tanks.

Our winemaker, Mark, will use this system for Dolcetto, Barbera, Petite Syrah, and Nera D’avola.  We’re all looking forward to this upgrade and the wine that will come from it after harvest!
